Viennese are sweet and different!
My name is Ramira and I have been working in our beautiful Austria Classic Hotel Wen for 16 years. The last two years have been a challenge for all of us, which we have mastered sometimes better, sometimes worse. I use the lockdowns and the associated free time to improve my baking skills. I came across "Nora's chocolate cake" and would like to share the recipe with you.
Süßer Zahn
Wir Wiener haben einen „süßen Zahn“ und das zeigt sich auch in den vielen Vitrinen der Kaffeehäuser und Konditoreien. Wussten Sie, dass wir zu all den köstlichen Torten und Kuchen pauschal „Mehlspeisen“ sagen? Wenn man im Kaffeehaus einen „Kakao“ bestellt, bekommt mein eine heiße Schokolade. Ein „Einspänner“ ist ein doppelter Espresso mit Schlagobershaube. Schlagobers ist Schlagsahne. Sie sehen schon, Wien ist anders und Wienerisch eine eigene Sprache. Natürlich gibt es in Wien auch internationale Kaffee-Ketten, aber wir bestellen im Kaffeehaus unseres Vertrauens lieber einen „Großen Schwarzen“, eine „Wiener Melange“ oder einen „Franziskaner“. Zum Kaffee passt natürlich immer eine Mehlspeise und hier finden Sie das Rezept für meinen perfekten Schokokuchen.
Recipe for the perfect Chocolate Cake
ingredients:
250 grams of flour
1 teaspoon Baking powder
350 grams of sugar
1 packet of vanilla sugar
250 grams of butter
200 grams of dark chocolate
250 ml. water
2 tbsp crème fraîche
20 grams of cocoa powder
2 pcs eggs
baking the cake:
Preheat the oven to 170° top/bottom heat. Line or grease a round cake pan with parchment paper. Heat the water, crème fraîche, butter, sugar, vanilla sugar, cocoa and chocolate in a saucepan until the chocolate has melted. Leave to cool for 20-30 minutes. Beat in the eggs on high level. Mix together the flour and baking powder and stir in a tablespoon at a time. Pour the very liquid mixture into the cake pan and bake on the middle rack for 40 - 45 minutes.
